Medical Office Specialist

The medical office specialist program will provide skills training in basic computer operations, medical terminology, medical law and ethics, medical office procedures, professional etiquette, grammar review in relation to medical records, electronic health records and medical coding.

This is a fast-paced program that will be offered in a hybrid setting with few seated classes; most class sessions will be held online via BlackBoard. Students should have a valid email account prior to registering for this program.

At the completion of the program, students will have the opportunity to register and sit for the Medical Administrative Assistant Certification. The cost of the credential exam is $105 and is offered through the National Health Career Association. This class starts June 20 and costs $185.

Students who qualify may apply for scholarships through the Golden LEAF Foundation, through the State Employees’ Credit Union Scholarship or the BCCC Foundation Scholarship.

 

Gluten-Free Living

Participants will enjoy a gluten-free meal that is tasty and fun to replicate at home. They will have a chance to share experiences and resources for those who are gluten intolerant. Mary Parker Egbert will empower participants to live without wheat and to serve satisfying food to family and friends. The menu will include spinach poppy-seed salad with strawberries and walnuts, chicken tetrazzini with fresh herbs and roasted asparagus with balsamic glaze and amaretto cheesecake with Chantilly cream. This $35 class will take place June 8 at 6 p.m.

 

Crab Cakes

Participants will learn to make crabmeat fresh from the Pamlico Sound into delicious crab cakes.

Michael McClure will share the recipe for his award-winning crab cakes. The menu will be mixed salad with herbed vinaigrette, crab cakes with fresh salsa, asparagus in butter sauce, Amish corn casserole and lemon pound cake. This $40 class will take place June 15 at 6 p.m.

 

Redneck Pesto

Genovese pesto via Philadelphia arrived in Beaufort County and took on a life of its own. Join Clay Carter to learn how to make this delicious summer dish with locally grown basil. The class will discuss tips for growing basil, how to make big batches of pesto and how to enjoy it right away or store it for later use. Class participants will produce and enjoy a pesto feast, and everyone will leave with a container of pesto to enjoy at home. The menu consists of crostini with fig and blue cheese spread, a simple salad, fettuccini with fresh pesto, pine nuts, chopped tomatoes, bacon (that’s the redneck part), garlic bread and tiramisu. This $30 class will take place June 22 at 6 p.m.
